  • 1.5 lbs (700g) chicken, cut into bite-sized pieces

  • 2 tablespoons vegetable oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch ginger, grated

  • 2 tomatoes, chopped

  • 1 cup coconut milk

  • 1 cup chicken broth

  • 2 tablespoons curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon chili powder (adjust to taste for spice level)

  • Salt and pepper to taste
