Raspberry Tart Recipe


  • 1 1/2 cups all-purpose flour

  • 1/4 cup granulated sugar

  • 1/2 teaspoon salt

  • 9 tablespoons unsalted butter, chilled and cut into small pieces

  • 1 large egg yolk

  • 2-3 tablespoons ice water

  • 1 1/2 cups fresh raspberries

  • 1/4 cup raspberry jam

  • Confectioners' sugar for dusting


  1. Combine flour, sugar, and salt in a food processor. Add butter and pulse until the mixture resembles coarse crumbs. Add egg yolk and ice water, then pulse until the dough just comes together.

  2. Press the dough into the bottom and up the sides of four 4-inch tart pans. Refrigerate for 30 minutes.

  3. Preheat the oven to 375°F (190°C). Prick the tart shells with a fork, line with parchment paper, and fill with pie weights. Bake for 15 minutes. Remove the weights and parchment and bake for another 10 minutes, until golden.

  4. Let the tart shells cool. Fill each with raspberry jam, then top with fresh raspberries. Dust with confectioners' sugar before serving.
