Ingredients


  • 2 lbs spinach, chopped

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup olive oil, divided

  • 1 cup feta cheese, crumbled

  • 1/2 cup fresh parsley, chopped

  • 2 eggs, beaten

  • Salt and pepper to taste

  • 1 package phyllo dough, thawed

  • 1/2 cup unsalted butter, melted

Directions


  1. Preheat your oven to 350°F (175°C).

  2. In a large skillet, sauté the onions and garlic in 2 tablespoons of olive oil until soft.

  3. Add the spinach to the skillet and cook until wilted.

  4. Transfer the spinach mixture to a bowl and let it cool. Mix in feta, parsley, eggs, and season with salt and pepper.

  5. Unroll the phyllo dough and cover with a damp cloth to prevent drying out.

  6. Brush a baking sheet with some of the melted butter. Place a sheet of phyllo at the bottom, brush it with butter, and repeat with 6-8 more sheets.

  7. Spread the spinach and cheese mixture over the phyllo dough. Then, layer the remaining sheets on top, brushing each with butter as before.

  8. Tuck in any overhanging dough and brush the top with the remaining butter.

  9. Bake for 30 to 35 minutes, or until golden brown.
