Whole Wheat Bread


  • 3 cups whole wheat flour

  • 1/4 cup dry milk powder

  • 1 packet (or 2 1/4 teaspoons) active dry yeast

  • 1 1/4 teaspoons salt

  • 2 tablespoons honey or maple syrup

  • 1 large egg (optional)

  • 1/4 cup vegetable oil or melted butter

  • 1 to 1 1/4 cups lukewarm water


  1. In a large mixing bowl, combine all the dry ingredients: the flour, milk powder, yeast, and salt.

  2. Add the honey (or maple syrup), the egg (if using), and the oil or butter. Start mixing and gradually add the water. You want to add just enough to create a dough that's soft and slightly sticky.

  3. Knead the dough for about 7-10 minutes using a mixer, or by hand on a lightly floured surface, until it's smooth and elastic.

  4. Place the dough in a lightly greased bowl, cover it, and let it rise in a warm spot until it's doubled in size. This should take about 1 to 2 hours.

  5. After the dough has risen, gently deflate it and shape it into a log. Place it in a greased 9" x 5" loaf pan.

  6. Cover the pan loosely with a piece of greased plastic wrap and let the bread rise again until it's crowned about 1" over the rim of the pan. This should take about 1 to 2 hours.

  7. Preheat your oven to 350°F (175°C). When the bread has fully risen, bake it for about 35-40 minutes, until it's golden brown on top and sounds hollow when tapped on the bottom.

  8. Remove the bread from the oven, and turn it out of the pan onto a wire rack to cool.
